Pineapple Pork Fried Rice




I use basmati rice and just prepare 2 cups using the directions on the bag. (Also, you can season the rice water with soy sauce and it works really well) 

In the meantime grab a wok and drizzle a bit of oil and add in a couple cloves minced garlic and some fresh minced ginger. Next toss some good quality ham cut into strips. Cook on med/high for about 2 min.

Next add a cup diced pineapple and a tablespoon and a half of juice. Cook on med/high heat until the juice become syrupy and coats the 
ham. 

Then remove it all from the pan. Add a little more oil and toss in 4-6 chopped carrots and cook until soft. 

Next add a package of frozen peas and a sprinkle of red pepper flakes (as much as you like) and cook about 90 more seconds.  Remove the veggies and add 3 eggs whisked with a tablespoon of soy sauce and cook until about half way to scrambled egg consistency and add the rice and stir like crazy. 

Then just tossed the ham, pineapple, and veggies in, season with soy sauce, pepper, and ground ginger to taste. Top with sliced green onion and a bit of hot sauce (sriracha) if you like, and enjoy! 

Makes enough for 4-6 people with some decent leftovers.

Ingredient list: 

2 cups Dry Basmati Rice
3 cloves Garlic, minced 
1/2 thumb-sized piece Fresh Ginger
8oz Ham, cut into small strips
1 cup Diced Pineapple 
1 1/2 Tbs Pineapple juice
4-6 Peeled Carrots, diced 
1 package Frozen Peas
3 Eggs 
3 Green Onions 
Ground Ginger it Tumeric
Canola Oil
Soy Sauce
Red Pepper Flakes, to taste 
Sriracha, (optional, sort of)
